Preparation:

  • 9″ Square Pan
  • Cooking Spray
  • Mixing Bowl

Crust:

  • 1½ Cups of Flour
  • ½ Cup of Sugar
  • ¾ Cup of Margarine
  • 1 Teaspoon of Vanilla Extract

Filling:

  • 4 Eggs
  • ½ Cup of Lemon Juice
  • 1 Teaspoon of Baking Powder
  • 1½ Cups of Sugar
  • 1 Teaspoon of Vanilla Extract

Topping:

  • 1 Cup of Flaked Coconut
  • ½ Cup of Powdered Sugar (for dusting the bars)

Time to Whip Up a Batch of These Delicious Bars!

  1. Preheat your oven to 350º.
  2. Mix the crust ingredients together until they are blended and the consistency of damp sand (if you don’t have a mixer, use your hands!).
  3. Press the crust into the bottom and sides of a lightly greased 9″ square pan.
  4. Bake the crust at 350º for 15 minutes.
  5. While the crust is baking, blend the filling ingredients together.
  6. Remove the crust from the oven, allow to cool, and pour the filling mixture into the prepared crust.
  7. Bake for an additional 15 minutes. After pulling the pan out of the oven, sprinkle coconut on top. The filling will still be runny, so be careful not to jostle the pan when you add the coconut.
  8. Place the pan back into the oven and bake until the filling has set and the coconut is toasted (about 30 more minutes).
  9. Allow the bars to cool before cutting. For easier cutting (and sharing with friends), chill the pan in the fridge for 2 hours.
